Each course focuses on a single ingredient – like oyster, truffle, scallop, or aged beef – and amplifies exceptional focus to the very best ingredients.
That exceptional bounty comes from Nicholas long-trusted network of independent suppliers, who have been the cornerstone of his restaurants since the beginning of his thirty five years in the business, sustainably sourcing ingredients like day boat fish, heirloom vegetable, & farming responsibly.
